*3  Observed the following foods to be held @ improper temperatures: 1. bacon held at 79 2. eggs held @ 83 *Please do not overstock eggs. Keep 1 crate out @ a time not 8 or so crates. Eggs cannot be held at that high of a temp. Bacon must be cooked and held hot @141 or higher or kept cold @ 41 or below until cooked completely cannot be kept out! (750.180) Immediate/Onsite
*12  Observed the following improper hand washing practices: 1. observed employee in dish area to handle dirty dishes, empty all food, drain, and then handle clean dishes. 2. observed no paper towels in men's bathroom in employee area. 3. observed ash try on table w/buns 4. observed employee to wipe surfaces clean w/dirty rags and also use to handle pans of food. *Employees need to practice better hand washing practices. If they handle dirty dishes they must wash hands before they handle clean dishes. Employees may not use rags as common towels. Smoking can take place @ that back table so long as no food is stored on that table. (750.510) Immediate/Onsite
*20  Observed the dish Machine to not be sanitizing. *The dish machine many NOT be used until it is working properly and the health dept. is called to check sanitizer. Until then dishes must be washed in the 3 bay. (750.820)  
*35  Observed the back door to need a new weather strip. *Please provide a tight fitting self closing door. (750.1170) Immediate/Onsite
Observed the following food items to be stored improperly: 1. a catsup bucket in back storage is missing lid 2. cans in storage must be 6" up off of floor 3. invert pie pans in storage 4. store tack shells protected (750.120) Next Inspection
10  Observed the ice cream scoops to be stored improperly. *Ice cream scoops must be stored in a dipper well w/running water or clean and dry not stagnant water. (750.290) Immediate/Onsite
14  Observed the following good contact surfaces to be improper: 1. improper scoop in lettuce bucket 2. cracked plastic meat pan in walk in cooler 3. bowl to dispense rice *Please use scoops w/handles and replace broken plastic containers. (750.130) Next Inspection

37  Observed the following wall ceiling areas to be in need of repair: 1. paint chipping on doors in back storage, bathroom, and to roof 2. fan covers rusty on walk ins 3. missing tiles around mop sink, under 3 bay etc. *Please paint and repair any broken/missing tiles.
